Erythritol is a sugar alcohol with zero calories, zero glycaemic impact. Substitute 1:1 for sugar. Works in cakes, cookies, cheesecake. Weakness: cooling aftertaste and it crystallises in ganache. Use powdered erythritol for smoother mouthfeel.
Stevia: intense sweetness, small amounts
Stevia is 200 to 300x sweeter than sugar. 1 teaspoon stevia powder replaces 1 cup sugar. But you lose bulk, so recipes fail unless you add a bulking agent like erythritol or almond flour. Use in beverages and mousse, avoid in sponge cakes.
Monk fruit: cleanest taste, premium price
Monk fruit blended with erythritol tastes closest to sugar with no aftertaste. Substitute 1:1. Cost is 3 to 4x erythritol, so use for premium keto orders where taste matters most.
Jaggery: not keto, but healthier than white sugar
Jaggery has slightly more minerals and lower glycaemic index than refined sugar, but still spikes blood sugar. Substitute 3/4 the volume of sugar. Adds caramel note and darkens the crumb. Works in tea cakes, banana bread, ragi cookies. Not suitable for diabetic clients.
